
SWEET & STICKY SHIITAKE BAOS
Soft, fluffy baos filled with juicy, sweet and sticky Fable
Makes 20 portions

INGREDIENTS
2.2lb (1kg) bag of Fable Pulled Shiitake Mushrooms, thawed
1 tbsp neutral oil
4 nuggets of ginger, julienned
2 tbsp Chinese five spice
100ml oyster sauce
100ml soy sauce
80ml ketchup
50ml rice wine vinegar
80ml honey (or agave)
100ml Shaoxing wine (or dry sherry)
100ml water
To serve (1 bao):
Asian style steamed bao bun
¼ cup sweet and sticky Fable filling
Pickled daikon and carrots
Spring onion, sliced into thin strips
Optional garnish:
Fresh cilantro (coriander)
Toasted sesame seeds
METHOD
In a bowl, whisk together oyster sauce, soy sauce, ketchup, vinegar, Shaoxing wine, water, and five spice.
Heat oil in a large flat-top grill or pan. Add Fable and cook over medium-high heat for 4–5 mins until lightly browned. Add ginger and sauce, cooking for another 3–4 mins until sauce starts to reduce. Stir in honey and cook until thick and sticky (another 3–5 mins).
To serve:
Steam bao buns according to their pack instructions. For each bao, fill with ¼ cup of Fable and top with pickled veggies and spring onion. Garnish with fresh cilantro, sesame seeds and whatever else that tickles your fancy.
Tips & suggestions:
Sweet and sticky Fable filling can be made ahead and held refrigerated for up to 3 days.
Experiment with different flavor profiles for the bao filling e.g. Gochujang or Teriyaki
Mix and match toppings for textural variation e.g. kimchi, sliced cucumber, pickled onions
