SHREDDED HOISIN SHIITAKE PANCAKES

A tribute to the Chinese street food classic — sweet and savory pancakes filled with hoisin-glazed shredded shiitake, delicately wrapped for an irresistible bite

INGREDIENTS

2.2lb (1kg) bag of Fable Pulled Shiitake Mushrooms, thawed

  • 160ml (⅔ cup) neutral oil (e.g. canola or vegetable)

  • 2 cups hoisin sauce

  • 3 tsp Chinese five spice

  • 8–10 spring onions, julienned

  • 3 whole cucumbers, julienned

To serve (1 pancake):

Mandarin pancake wraps or Chinese wheat pancakes

40g shredded hoisin shiitake filling

Pinch of julienned spring onions and cucumbers

METHOD

Shred Fable into smaller bits to expose fibers. Heat oil in a frying pan over High heat. Once hot, add shredded Fable cooking for 8-10 mins until very crispy (use a wooden spoon to scrape Fable pieces from bottom of pan).

Add Chinese 5 spice and hoisin sauce, coating Fable evenly. Serve with warmed pancakes, spring onion and cucumber.

Tips & suggestions:

  • Dish can be served family style or individually plated.

  • Pre-shred Fable in batches and cook fresh to order to maximize crispness during service.

  • Shredded hoisin shiitake filling will maintain crispiness in hot hold for up to 1 hour.
