
Shiitake & broccoli stir fry

INGREDIENTS
2.2lb (1kg) bag of Fable Pulled Shiitake Mushrooms, thawed
4 tbsp neutral oil
3-4 broccoli heads, cut into florets
For stir fry sauce:
1 tbsp fresh ginger, grated
2 tbsp garlic, grated (approx. 6 cloves)
1¼ cups (300 ml) hot water
¾ cup (180 ml) tamari or soy sauce
6 tbsp packed light brown sugar
3 tbsp cornstarch
½ tsp black pepper
4 tbsp sesame oil
METHOD
In a bowl or jug, whisk together hot water, soy sauce, brown sugar, cornstarch, black pepper, sesame oil, ginger and garlic until smooth. Set aside.
Heat oil in a wok or fry pan on High heat. Once hot, add Fable and onions, cooking for 5-6 mins or until Fable starts charring. Add sesame oil, sliced garlic and broccoli to the pan, giving it a good stir for 1 min. Once fragrant, add the stir fry sauce and sesame seeds, mixing it through and cooking for a further 2-3 mins.
Garnish with sesame seeds and serve as a main dish or hot over steamed rice or noodles.
Tips & suggestions:
Dial up the heat with a chili crisp or oil garnish.
Add tofu, beef, or other vegetables such as baby corn or carrots to add textural variety and color.
