
FABLE TACOS
This yummy goodness won’t last for long. Load up the guac and hear them begging for more.
Makes 4-5 tacos

INGREDIENTS
180g box of Fable Pulled Shiitake Mushrooms
Olive oil
1 taco seasoning packet of your choice (~1oz or 30g)
4-5 soft tortillas (6 inch, corn or flour)
1 cup Mexican-style cheese, grated
4 firm roma tomatos, diced
2 jalapeños, deseeded and finely diced
2 avocados, halved and seed removed
1 red onion, finely diced, separated into halves
Handful coriander, finely chopped
1 lime, cut into halves
1 lemon, cut into halves
1 small jar of salsa roja
Salt and pepper, to taste
METHOD
Prepare all of your fresh toppings for the tacos.
Simple pico de gallo: In a bowl, combine the diced roma tomatoes, ½ the diced red onion, generous pinch of coriander, ½ tbsp olive oil and squeeze of half a lime, adding salt to taste. Take the other half of the lime and cut into wedges for serving later.
Guacamole: Scoop avocado flesh into a bowl. Add the remaining red onion, generous pinch of coriander, ½ tbsp olive oil and squeeze of half a lemon, mushing to your desired consistency. Add lemon, salt and pepper to taste.
Now for the good part…
Remove Fable from the bag and add to bowl. Gently smash the Fable chunks into smaller pieces using a fork or your fingers to expose shiitake fibers.
If using oven: Pre-heat oven to 450°F/230°C. Toss smashed Fable lightly in oil and spread evenly on a tray. Cook for 6 minutes. Once cooked, toss or stir through with taco seasoning.
If using fry pan: Add oil to a very hot pan and add smashed Fable. Cook for 6 minutes, stirring frequently to avoid Fable sticking to the pan. Add taco seasoning and stir through for another minute.
And lastly, heat the tortillas in a pan or flat grill.
To assemble: Start with a spoonful of salsa roja, spreading evenly across the center of the tortilla. Add a scoop of Fable filling, top with cheese, pico de gallo and a dollop of guacamole. Finish with a squeeze of lime and enjoy.
Use the Fable filling for other Mexican recipes such as burritos, bowls, nachos, enchiladas, quesadillas, you name it!
