CRISPY SHIITAKE BITES

Crackling with umami in every bite, these divine little morsels are a full-blown textural symphony. Ridiculously crisp on the outside, juicy and tender on the inside

INGREDIENTS

2.2lb (1kg) Fable Pulled Shiitake Mushrooms, thawed 

Oil for frying 

2 cups seasoned all-purpose flour 

For seasoned slurry:  

8 cups seasoned all-purpose flour

2 tbsp kosher salt

2 tbsp garlic powder

2 tsp cayenne pepper 

4 cups water 

METHOD

Prepare seasoned slurry by combining ingredients in a bowl. Put seasoned flour into a second bowl. Roll and coat Fable in flour, then slurry and flour again.

Heat oil in a deep pan over medium-high heat. Once hot, deep fry Fable chunks until golden and crispy (5-7 mins). Drain excess oil over paper towel and serve with a smoky BBQ sauce or creamy aioli.
