STICKY TERIYAKI POKE BOWL

Create it with whichever base, accompaniments and sauces that suit your fancy. This is our take but you can substitute any of the elements with what you like. The only imperative is that you have a party…a poke party!

INGREDIENTS

2.2lb (1kg) bag of Fable Pulled Shiitake Mushrooms, thawed

4 garlic cloves, minced

4 thumbs of ginger, minced

½ cup soy sauce

1 cup mirin

4 tbsp sugar or honey

2 tsp sesame oil

½ cup neutral oil

2.2lb (1kg) cooked rice, brown or white

8 cups red cabbage, shredded

4 cups edamame beans, shelled and cooked

4 avocados, sliced

6-8 red radishes, thinly sliced

4 carrots, julienned

Juice of 2 lemons

METHOD

Dress shredded cabbage with 1 tsp of salt and generous squeeze of lemon juice, set aside to soften. Heat oil in pan until hot, then add Fable and fry until browned and edges begin to crisp (6-9 mins). Add garlic, ginger, soy sauce, mirin and sugar and all to cook until caramelized (another 5-6 mins). Take off heat and add sesame oil.

Have your red cabbage, edamame beans, avocados, red radishes and carrots ready for assembling.

To serve:

Starting with 1 cup cooked rice, ¼ cup sticky Fable, ¼ cup cabbage, and ¼ cup edamame beans. Top with a few slices of avocado and red radish. Then get your party hat on because it’s time for a poke party!

Tips & suggestions:

  • Optional to add chopped nori or fresh chili as a garnish.
