
LOADED CHIPS WITH BBQ SHIITAKE

INGREDIENTS
2.2lb (1kg) bag of Fable Pulled Shiitake Mushrooms
Neutral cooking oil
4 tbsp HP sauce
1 cup Sweet (Kansas City Style) Sticky Barbeque sauce
1.3lb (600g) freshly cut potato chips
Optional toppings:
Chopped spring onions
Crispy fried onions
METHOD
Heat oil in pan on high heat. Once hot, cook Fable or 5-6 mins. Add HP sauce and quickly coat all pieces. Then add the BBQ sauce, cooking for another minute.
Fry your potato chips until golden and crispy. Drain them ready for dressing.
To serve:
Piled the chips in a bowl and top with a generous serving of BBQ Shiitake. Scatter with crispy fried onions and freshly chopped spring onions. Dive in!
